Alsi Ki Ladoo (Flaxseed Ladoo) with Foxtail Millets
Ingredients: Flaxseeds (500g), wheat flour (500g), ghee (400g), jaggery/sugar (750g), chopped cashews, almonds, pistachios, raisins, ground cardamom.
Preparation: Roast flaxseeds and wheat flour separately. Prepare a syrup with jaggery or sugar. Mix the roasted ingredients with the syrup and chopped nuts. Form into ladoos while warm.
Prunes, Dates, and Nuts Sugar-Free Burfi
Ingredients: Seedless dates (200g), prunes (50g), golden raisins (50g), mixed nuts, ghee (100g).
Preparation: Chop dates, prunes, and nuts. Roast nuts in ghee, then add dates and prunes. Spread the mixture in a greased tray, cool, and cut into squares.
Baked Ragi Chakli
Ingredients: Ragi flour (¾ cup), yogurt (½ cup), wheat flour, sesame seeds, chilli powder, hing, salt, oil
Preparation: Mix dry ingredients, form a dough with yogurt and water, add oil, and shape into chaklis. Bake at 180°C for 30 minutes.
Horse Gram Dal Gujiya
Dough: Maida (2 cups), ghee, salt, water
Filling: Cooked horse gram dal, cumin, fennel, sesame seeds, spices, green chillies, ginger.
Preparation: Make dough, prepare the filling, shape gujiyas, and deep fry until golden.
